Baked Banana Meringue

Ingredients

  •  
  • 3 large Fresh White Egg
  • 2 tbls Sugars, granulated
  • 1/8 tsp Leavening agents, cream of tartar
  • 1/4 tsp Vanilla extract
  • 1 dash Table Salt
  •    Cooking spray
  •  
  • 2 oz Desserts, puddings, vanilla, dry mix, instant -- instant
  • 3 cup Skim Milk, with vitamin A
  • 2 large Bananas, raw
  •  
  • 8 med Cookies, graham crackers, plain or honey (includes cinnamon)

Directions

1. Preheat oven to 300 Fahrenheit.
2. In a large bowl, beat egg whites until slightly stiff. Gradually add sugar and cream of tartar and continue to beat.
3. Add vanilla and salt and continue beating until whites stand in stiff peaks.
4. Spray a glass baking dish with cooking spray.
5. Spread meringue over entire bottom and sides of the dish to form a crust.
6. Bake for 45 minutes. Remove and cool.
7. After crust has cooled, prepare pudding mix according to package directions with the milk and fold in sliced bananas.
8. Pour pudding mixture into crust. Sprinkle ground graham crackers on top. Chill and serve.
