Creamy Blackberry Cobbler

Ingredients

4 cup Blackberries, raw -
3/4 cup Sugars, granulated -
3 tbls Wheat flour, white, all-purpose, enriched, bleached -
1 1/2 cup Water -
1 tbls Lemon juice, raw -
2 tbls Butter Diet

1 3/4 cup Wheat flour, white, all-purpose, enriched, bleached -
2 tbls Sugars, granulated -
2 tsp Leavening agents, baking powder, double-acting, sodium aluminum sulfate -
1 tsp Table Salt -
1/4 cup Shortening industrial, lard and vegetable oil -
6 tbls Heavy Whipping Cream Diet

6 tbls Buttermilk Diet
Directions
1. Place berries in a lightly greased baking dish.
2. Combine sugar and flour together and add water and lemon juice, mix well.
3. Pour syrup over berries; bake at 350F for about 15 minutes, while preparing the pastry.
4. Place pastry over hot berries and brush with melted butter. Bake at 425F for about 20 minutes, or until pastry is golden brown.
PasTRY:
5. Combine the flour, sugar, baking powder, and salt. Cut in the shortening until mixture resembles coarse crumbs; stir in whipping cream and buttermilk.
6. Knead dough several times and roll out on a lightly floured surface. Cut dough to fit the baking dish.
7. Serve cobbler warm.
